So what makes a good cookware set?

What did you consider last time you chose a set?
Maybe it was the color or the price, perhaps you always buy a well known make, or just look for a bargain.
As far as materials are concerned you have a varied choice but heat conduction is considered an important factor by many.
Copper
The most efficient conductor of heat by far but, because copper reacts with food the pots
are usually lined with, in the past tin, and nowadays, stainless steel or nickel.
Being very responsive to heat changes cooper is typically used to make delicate sauces and you will usually find a few copper pots in
professional kitchens.
Unfortunately copper is heavy and difficult to maintain. However, purists enjoy regularly polishing and cleaning their pots and enjoy
the rustic look they acquire.
Aluminum
Aluminum can be found in all price ranges and in various forms.
A popular variant is hard-anodized, a process that changes the color to a charcoal grey whilst hardening the surface of the pan.
Aluminum is second only to copper in its conductivity of heat. Aluminum pans are also light and usually safe in the dishwasher.
Aluminum is soft however, and can react with acidic food.
Cast Iron
Once you have completed seasoning new cooking utensils properly you will find cast
iron distributes heat very evenly. Cast iron is inexpensive and lasts
forever.
The only trouble with cast iron is it is heavy but some feel this is a small price to pay for the wonderful flavour cast iron can impart into

Stainless Steel
Stainless steel is an alloy and consists of iron combined with as many as 8 other
metals.
Stainless steel is smooth and therefore easy to clean but it is a poor conductor of heat and pans are prone to 'hot spots'.
Non Stick
Non stick comprises a coating that is bonded to the surface of a pan. The quality of this coating and the number of layers varies and
generally price will be a useful indicator of the quality.
Non stick pans are very easy to keep clean and release the food easily. Howver, the cheaper pans make be prone to chipping of the non
stick coating.
